What we had for lunch today!


100% Raw Except for the Protein (homemade refried beans)

Doesn't it look yummy?  It was!

  • Refried beans with a quick pico/avocado mix on top
  • Fresh crisp leaf lettuce, shredded carrots and red cabbage (done in our prep time on Sunday)
  • Fresh sugar snap peas (my favorite) tossed in a roasted garlic dressing!



How to do it:
Beans:
Wash a bag of pinto beans, soak for 24 hours, rinse and put in crock pot.  Cover with water, add an onion cut in big chunks 3-6 cloves of garlic, a splash of cumin and a splash of fennel seed, crushed.  Cook all day (make sure you have enough water if you aren't going to be home all day).

When you get home at night, most of the liquid should be gone, you can drain some of it off but save it in case you need a little moisture.  Take a potato masher and smash the beans, onions, etc until the look like refried beans.  You can also put them in a food processor but must cool first and really messy.  Use your muscles and smash away.

You can put half of the beans in a container in the freezer for later.  Keep the other half for a few days.

To warm, put in a convection or toaster oven on a plate for about 10 minutes until they bubble.

Pico/Avocado:
Cut up 1 green onion, part of a jalpeno pepper (if you don't like really hot food then just a little), 1 roma tomato, the juice of one lemon and some garlic powder or fresh garlic, stir it up and set aside.  Smash one avocado, mix with the pico.  When the beans are warm, put this mixture on top!  It is yummy.  Enjoy!

Salad:
We did our prep on Sunday, washed lettuce and put in bags, put carrots, purple cabbage and broccoli through the food processor, put in glass containers for the week.  Easy!  Just take it out and throw it together.

Because I had my prep done and the beans in the freezer (I took them out last night to thaw) this great meal took less than 10 minutes to prepare.

This salad/bean lunch has:
  • CALORIES:  392  - all from food, no additives or fillers
  • FAT:  5.26 - all good (monounsaturated) fat
  • CHOLESTEROL:  0 - none!  zippo!
  • SODIUM:  286 gr - all natural sodium from food - no salt added
  • CARBS:  56.75 - all from unrefined plants - none of these will attach to your butt
  • PROTEIN:  14 gr - no animal fat, easily digested
  • VIT A:  314 % of the recommended daily allowance
  • VIT C:  105% of the recommended daily allowance
  • CALCIUM:  22% of the recommended daily allowance
  • IRON:  46% of the recommended daily allowance
There are 9 ingredients in this meal.  All are from real, whole, unprocessed foods.  There are no additives or preservatives!

Compare this with the Panera Bread Grilled Chicken Ceasar Salad
  this is not just a good salad with meat on it!

Note these things:  Calories:  510 and Fat 28 grams (8 gr saturated and .5 gr trans fat!)

LOOK AT THE INGREDIENTS!  THERE ARE 62 INGREDIENTS JUST IN THE SALAD!  There is a lot of wheat from filler, flavoring and croutons.
